We season rather than marinate. Good lamb does not need to be hidden, and the point of a chop is the contrast between a charred, rendered edge and a pink centre. Tell us how you want them - most people say medium, and most people are right.
Lamb chops are an unforgiving cut. They are expensive, they cook fast, and a minute of inattention turns them grey. Plenty of kitchens either skip them or hold them under heat until they are safe and joyless.
We have been grilling them on Preston Highway since 1998, which is long enough to have gotten the timing into our hands rather than a chart. They are cooked to order, one plate at a time.
They are also 100% halal, like everything else on our menu - which is not true of most places in the city serving a chop at this level.

Walk-ins are welcome. For six or more, call (502) 363-7788 so we can time the kitchen properly - chops for a large table need a little coordination.
